“Vô tửu bất thành lễ” là quan niệm ăn sâu vào dân Việt từ xưa, do ảnh hưởng bởi tư tưởng nho giáo. Người Việt nấu rượu từ nguyên liệu chính là gạo nếp, nấu và ủ với men. Rượu ấy cũng có nhiều tên gọi khác nhau như rượu trắng, rượu ngang, rượu gạo, rượu chưng, rượu cuốc lủi. Còn cái tên “rượu đế” hay “đế” lại có nguồn gốc xuất phát gắn với lịch sử của dân tộc.

Thời kỳ Pháp thuộc, người Pháp đến Việt Nam và giành độc quyền sản xuất, buôn bán gạo, muối và rượu. Họ cấm người dân tự ý nấu rượu. Trong khi đó, rượu trắng lại là món gắn liền với đời sống dân ta. Vì thế, để trốn tránh chính quyền, người dân nấu rượu chui và ủ giấu dưới những gốc bụi đế rậm rạp. Cây đế là một loại thực vật họ hòa Thảo, có bông màu tím và có nhiều gai góc.

Hiện nay, tên rượu đế được sử dụng phổ biến tại miền Nam, trong khi miền Bắc lại thông dụng tên gọi rượu cuốc lủi, hay rượu trắng, rượu nếp. Cùng một loại rượu, nhưng mỗi địa phương có cách nấu cũng như nguyên liệu thêm khác biệt tạo nên đặc trưng, tên rượu cũng thay đổi theo đó. Nhưng kết lại, rượu đế cũng được xem là “quốc tửu” của Việt Nam, không chỉ người Việt mà người nước ngoài cũng đều ưa thích.

“Vô tửu bất thành lễ” (simple translation means “No alcohol, no festival”) is a concept deeply ingrained in the Vietnamese people since ancient times, influenced by Confucian thought. Vietnamese people make wine from the main ingredient, which is glutinous rice, cooked and brewed with yeast. That wine also has many different names such as white wine, horizontal wine, rice wine, distilled wine, and hoe wine. The name “Rượu đế” or “Đế” Liquor is derived from the history of the nation.

During the French colonial period, the French came to Vietnam and monopolized the production and trade of rice, salt and alcohol. They forbade people to arbitrarily cook alcohol. Meanwhile, white wine is a dish associated with our people’s life. Therefore, in order to evade the government, people secretly cook wine and brew it under the thick bushes. It is a herbaceous plant, with purple flowers and many thorns.

Currently, the name Rượu đế is commonly used in the South, while in the North, the name is commonly known as “rượu cuốc lủi” - local words, or white wine, or sticky rice. The same type of wine, but each locality has a different cooking method as well as different ingredients to create a characteristic, the name of the wine also changes accordingly. But in the end, Rượu đế is also considered the “national wine” of Vietnam, not only do Vietnamese people love it but also foreigners.
